This is the first potluck I’m going to so I want to make an excellent dinner. Any suggestions on your favourites? Thanks!

    Hi Nicole, A chicken casserole will usually go down well. Served with rice or French bread it will go down even better. I’ll be straight round. :>) I hope this helps, all the best. Rab

    Baked Beans

    8 ounces bacon
    1 pound ground beef
    1/2 cup chopped onion
    2 (12 ounce) cans pinto beans, drained
    and rinsed
    2 (15.5 ounce) cans canned butter beans
    , drained and rinsed
    2 (15 ounce) cans canned baked beans
    with pork
    1 cup barbeque sauce
    1 cup ketchup
    1 cup brown sugar, packed
    DIRECTIONS:
    1.Place the bacon in a large, deep skillet and cook over medium-high heat until evenly brown. Drain on paper towels, crumble, and set aside. Drain bacon fat from the skillet.
    2.Using the same skillet, cook the ground beef and onion over medium heat, stirring until the meat is no longer pink, 5 to 7 minutes. Drain.
    3.Transfer the ground beef to a slow cooker. Add the pinto beans, butter beans, baked beans with pork, barbeque sauce, ketchup, and brown sugar to the ground beef mixture; stir to blend well. Cover and cook for 4 hours on High. Top each serving with crumbled bacon.

    Recipe for Macaroni Potato Salad from Hawaii
    This is one of those recipes that after making it once or twice, you can start to add whatever you have on hand to suit your tastes, making it your own recipe for macaroni potato salad from Hawaii. For the basics, you will need:

    1 pound elbow macaroni
    1 cup mayonnaise – must be Best Foods!
    1 large sweet onion, either a Maui onion or, if you cannot find one, a Texas sweet onion or a red onion will do
    2 carrots shedded
    3 russet potatoes boiled and diced.
    4 large hard-boiled eggs
    2 stalks celery, chopped fine
    1 teaspoon mustard
    Salt, pepper, and dill weed to taste.
    Cook the pasta to al dente. Rinse in cold water.
    Cook the potatoes and dice them into 1/2 inch cubes.
    Rough chop the eggs.
    Mix everything in one big bowl.
    Chill at least one hour in the refrigerator.
    For variations on this recipe, you can add sweet pickle relish or Italian dressing, chopped green onions frozen or fresh peas, corn or whatever else you happen to have on hand or think would taste good. Celery salt and celery powder are popular additions and I like to add just a touch of garlic powder and some fresh chopped oregano. As long as you have the basic mayonnaise, macaroni, and potato, you have the classic recipe for macaroni potato salad from Hawaii.

    Where and when is the dinner? Themed?
    I make pasta dishes for potlucks. Cold if in Summer, warmed if in Winter, and always use what’s in season (for those green friends of mine) or what’s comforting. . . like a good casserole!
